Can the two AHS vaccines be given back to back, and/or can the horse be given a double dose once? (I heard of someone who did that, with no negative consequences)?

The vaccine must be given 3 weeks apart. Double doses are a waste of time as you are overloading the immune system with multiple vaccine strains.
